Crab Salad Santorini Style
You don't need to be in Santorini to enjoy the delicious cuisine they have to offer. Our partners at the breathtaking Canavas Oia Hotels & Villas shared with us this outstanding Athenian Salad with King Crab recipe and we cannot get enough of it. Enjoy!
Athenian Salad with King Crab from Canavas Oia Hotels & Villas
Ingredients
King crab leg with solder (1 piece)
1 carrot
1 potato
1 celery stalk
1 cucumber pickle
Caper
20 ml of olive oil
Olive Mayonnaise (15 ml)
Parsley
Anise
Lemon juice
Lemon zest
Salt & Pepper
Homemade Mayonnaise Ingredients
1 egg yolk
Sunflower oil (300 ml)
Olive oil (200ml)
Champagne vinegar (5 ml)
Salt & Pepper
Preparation:
Boil the crab for about 8 minutes. Then, cool it with chill water. Cut all vegetables in small cubes and boil according to your preferences (we prefer not to boil the vegetables too much in order not to loose their ccolours and flavor). We freeze as well with chill water. Cut the parsley, anise and caper. Remove the flesh of the crab and keep a small part to roast. We prepare the mayonnaise: add on a bowl the egg yolk, the champagne vinegar and then slowly the sunflower oil and olive oil. Season according to your preferences.
Method (2 portions):
Add on a bowl:
200grams. Crab flesh, 30 gram carrot, 30 gram selery, 20 gram potato, 10 gr. Cucumber pickle, 10 gram. Capers, 20 gram. Olive oil, 20 gram. Mayonnaise, 10 ml lemon juice, anise, parsley, leon zest, salt and pepper.
Then, stir for 2-3 min. until combined well. Roast the crab leg you reserved and serve on a plate. Enjoy!
Sau Sau Salud!
This mojito-esque cocktail from our friends at Marbella Club is perfect for lounging poolside in Spain (or at home in your backyard). A South Side, or Sau Sau was introduced to Marbella Club by the Marquesa San Damián who brought it over from NYC in 1969, it was a club drink on fashion at all the best establishments on the east coast, Long Island and Palm Beach. Now, you can enjoy it wherever you please!
Sau Sau from Marbella Club
Ingredients:
4 ice cubes or equivalent crushed ice
Handful fresh mint leaves
1 glass of stolichnaya vodka
1/2 fresh lime, juiced
1/2 tbsp sugar cane syrup
Directions:
Place ingredients in a cocktail shaker and shake vigorously to bruise the mint leaves, then strain into a chilled Collins glass, filled with ice. Garnish with a sprig of mint.

This week, General Manager of Eden Rock - St. Barths, Fabrice Moizan discusses how his hotel property has been handling the current pandemic and how you can still travel to the beautiful villas on property starting in June!
"As you may have heard, Saint Barths is COVID free for the past 3 weeks and we are quarantine “off” for 2 days. Borders are still closed so we live as Robinson Crusoé on our tiny island. All the citizens (10,000) will be tested (Virological test and serological test) in the coming weeks and Saint Barths' borders should reopen later in June when the entries protocols will be agreed & implemented during May (possibly mandatory tests for all entries). Yesterday we have announced to the Teams that we will not reopen the hotel but we will operate Eden Rock Villa Rental, the beach club at the hotel, the hotel restaurant, and the boutique starting mid-June when the borders will reopen."
